Mexican Style Chipotle Chili

I REALLY love chili. It's usually very easy to make and it's perfect for all those cold winter nights. One great thing about chili is that you can add whatever ingredients you like, such as different types of beans, jalapenos, various herbs and spices and so on until you get the taste you desire or the volume you need. Add a little cornbread on the side and you've got yourself the perfect meal! You can always make extra and freeze it for later.

Prep time: 10 min
Cook time: 45 min

What you need: 
1 lb ground hamburger or turkey, or 2 chicken breasts cut in pieces
Olive oil or butter
1 medium yellow onion, chopped
4 garlic cloves, minced
2 frozen cilantro cubes, or 1/4 C fresh chopped cilantro
7 oz chipotle peppers in adobo sauce
1 tsp chili powder
2 cans (28 oz) diced tomatoes
2 (30 oz) cans kidney beans
1 can (15 oz) corn
salt/pepper

What to do: 
  1. Heat the butter or olive oil in a large saucepan. Add the onion and garlic, saute until soft.
  2. Add your meat of choice and the cilantro. Brown the meat until fully cooked. 
  3. Add chipotle peppers and chili powder, mix well. ** Warning - Chipotle peppers can be very spicy, so add sparingly until you get the heat you want. 
  4. Add tomatoes, beans, corn and salt and pepper to taste. 
  5. Simmer on low for about 10 minutes, giving all the flavors a chance to combine.
  6. Serve it up with a dollop of sour cream, fresh cilantro and jalapenos.
