What you need:
1 lb ground hamburger or turkey, or 2 chicken breasts cut in pieces
Olive oil or butter
1 medium yellow onion, chopped
4 garlic cloves, minced
2 frozen cilantro cubes, or 1/4 C fresh chopped cilantro
7 oz chipotle peppers in adobo sauce
1 tsp chili powder
2 cans (28 oz) diced tomatoes
2 (30 oz) cans kidney beans
1 can (15 oz) corn
salt/pepper
What to do:
- Heat the butter or olive oil in a large saucepan. Add the onion and garlic, saute until soft.
- Add your meat of choice and the cilantro. Brown the meat until fully cooked.
- Add chipotle peppers and chili powder, mix well. ** Warning - Chipotle peppers can be very spicy, so add sparingly until you get the heat you want.
- Add tomatoes, beans, corn and salt and pepper to taste.
- Simmer on low for about 10 minutes, giving all the flavors a chance to combine.
- Serve it up with a dollop of sour cream, fresh cilantro and jalapenos.
