Famous Tebo Brownies

This is a recipe that has been used in my family for years. My mom was born a Tebo (without the w, so no relation to you know who) and the Tebo family is famous for a few things, well two things. There is a Mt. Tebo in Washington state and this mouth watering brownie recipe that was passed down from my great grandmother.
Now, I like simple food and this recipe is definitely simple. It seems like people are always adding extra "goodies" to their food to make it taste better, which is not always necessary especially if you are watching your calories or fat intake. Some would add caramel, chocolate chips, frosting, etc to these brownies but honestly they don't need it! They are tasty as is -- chewey, chocolatey, delicious and simple. Don't get me wrong, they pack about 200 calories per brownie... but it's well worth it.

Cook time: 30 minutes
Oven temp: 325°


What you need: 
Electric mixer
Large mixing bowl
Small mixing dish
Spatula
8x8 baking dish

Ingredients:
7 Tbsp unsweetened cocoa powder
3 Tbsp butter, crisco or vegetable oil (your choice depending on what you have or like to cook with)
1/2 C butter
1 1/4 C sugar
3 eggs
1 tsp vanilla
3/4 C flour
1/2 C chopped nuts (if desired)

  • In a small mixing dish, melt 3 tbsp of butter (I used crisco since I ran out of butter) and add cocoa powder, mix well and set aside.
  • In a large mixing bowl, beat together butter, sugar and eggs until creamy. Add cocoa mixture and vanilla, beat until it is completely brown. 

  • Slowly add flour and beat well, making sure all ingredients are well combined. Add nuts and fold into mixture with a spatula. 
  • With a paper towel and some crisco, grease the entire 8x8 pan. Flour the pan by adding a little spoonful and tapping the edges of the pan to spread the flour around.
  • Pour in the brownie mixture and place the pan in the oven for 30 minutes. Check doneness by inserting a clean dry knife into the center; if it comes out clean your brownies are done.
